Cut Through the FOG
On January 1, 2012, the City of Portland enacted Cut Through the FOG, which includes new rules and requirements for food service establishments. The rules are designed to reduce the amount of food waste and fats, oils and grease (FOG) in the city sewer system.
The attached fact sheet describes how Cut Through the FOG will affect existing food service businesses such as bakeries, commercial kitchens, hotels and restaurants and explains best management practices businesses can implement to offset sewer rates.
